Italian Sausage and Peppers Pasta

Ingredients:

  • 1 lb Italian sausage (you can choose between sweet, mild, or hot according to your taste preference)
  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 2 bell peppers (red, green, or a mix), sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 can (28 ounces) crushed tomatoes
  • 1 lb pasta (penne, rigatoni, or any pasta you prefer)
  • Grated Parmesan cheese, for serving

Instructions:

  1. Prepare the sausage: In a large skillet over medium heat, add the Italian sausage. Cook, breaking it apart with a spoon, until it’s browned and no longer pink inside. Remove the sausage from the skillet and set aside.
  2. Cook the vegetables: In the same skillet, add the olive oil, sliced onions, and bell peppers. Sauté until they start to soften, about 5 minutes. Add the minced garlic, oregano, and basil, cooking for another minute until fragrant. Season with salt and pepper to taste.
  3. Combine sausage with vegetables: Return the cooked sausage to the skillet with the vegetables. Add the crushed tomatoes. Stir everything together and let it simmer for about 10 minutes to let the flavors meld together.
  4. Cook the pasta: While the sauce is simmering, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta once it’s cooked.
  5. Combine pasta and sauce: Add the drained pasta to the skillet with the sausage and vegetable sauce. Toss everything together until the pasta is well coated with the sauce.
  6. Serve: Serve the pasta hot, sprinkled with grated Parmesan cheese on top.
